Ingredients

Ingredients

60 ml Sammy South Pacific

30 ml fresh pink grapefruit juice

15 ml fresh lime juice

10 ml unsweetened tart cherry juice

10 ml agave working mix (equal parts; see prep)

Glassware: 180 ml rounded cocktail coupe

Ice: Solid cubes for shaking; no serving ice

Garnish: 1 narrow grapefruit peel

Preparation

Use pure unsweetened tart cherry juice, not cherry liqueur or an alcohol-based flavouring. Agave working mix (equal parts): stir 30 ml Sammy agave with 30 ml water until uniform. Use the measured working mix listed for this drink, not the same measure of neat agave. Make fresh for the session, refrigerate promptly and keep chilled until use.

Make the cocktail

1. Pour all five measured ingredients into a shaker, add solid ice and shake sharply for 6 seconds; the working mix already contributes water.

2. Fine-strain into a chilled stemmed cocktail glass.

3. Twist the grapefruit peel above the surface, then curl it onto the rim.
