Preparation

White grape-tea base: steep 1.5 g white tea in two 60 ml measures of water at 85 C for 3 minutes; strain and cool. Combine 60 ml of the tea with 30 ml unsweetened white grape juice and 10 ml fresh lemon juice, then chill. This replaces white vermouth; do not add wine. Orange-peel infusion: steep 4 g freshly cut orange zest, with no white pith, in two 60 ml measures of water at 90 C for 10 minutes. Strain, cool and keep chilled. Measure only the infusion needed for the drink; no unmeasured water top-up. This is an unsweetened citrus preparation, not orange liqueur. Pomegranate-agave accent: stir 30 ml Sammy agave, 15 ml unsweetened pomegranate juice and 15 ml water until uniform. Use 10 ml of this accent in the drink; do not add the agave or pomegranate separately. Make fresh for the session, refrigerate promptly and keep chilled until use.

Make the cocktail

1. Add the chilled ingredients to a mixing glass and stir until the agave is fully dispersed.

2. Add solid ice and stir for 12 seconds. Strain into a chilled small stemmed glass.

3. Express the orange peel above the surface and set it against the rim.
