Ingredients

30 ml Sammy South Pacific

30 ml Sammy The Raconteur

15 ml orange-peel infusion

15 ml fresh lemon juice

15 ml agave working mix (equal parts; see prep)

Glassware: 160 ml optic coupe

Preparation

Orange-peel infusion: steep 4 g freshly cut orange zest, with no white pith, in two 60 ml measures of water at 90 C for 10 minutes. Strain, cool and keep chilled. Measure only the infusion needed for the drink; no unmeasured water top-up. This is an unsweetened citrus preparation, not orange liqueur. Agave working mix (equal parts): stir 30 ml Sammy agave with 30 ml water until uniform. Use the measured working mix listed for this drink, not the same measure of neat agave. Make fresh for the session, refrigerate promptly and keep chilled until use.

Make the cocktail

1. Measure all ingredients into a shaker and stir once to dissolve the agave.

2. Fill with solid ice and shake briskly for 8 seconds. Fine-strain into the chilled coupe.

3. Express the lemon twist above the drink and set it neatly on the rim.
