Ingredients

Ingredients

45 ml Sammy Piquant Raconteur

15 ml fresh lemon juice

15 ml fresh orange juice

10 ml Sammy Piquant agave, undiluted as supplied

15 ml aquafaba from a freshly opened can of unsalted chickpeas

One fresh orange-peel strip, approximately 2 g, with minimal white pith

Glassware: 200 ml broad-rimmed, gently angular coupe

Ice: Cubed ice for shaking; no serving ice

Garnish: One small orange-peel curl resting on the foam near the edge

Preparation

Use freshly squeezed, strained orange juice. The juice-and-peel combination is the explicit homemade orange-liqueur alternative; do not add Cointreau or standard triple sec. Reserve a second small strip of orange peel for the garnish.

Make the cocktail

1. Chill a cocktail glass. Squeeze the orange peel over the shaker to release its oils, then add the peel and all five measured liquids.

2. Shake without ice for 12–15 seconds. Add cubed ice and shake for a further 8–10 seconds.

3. Double-strain into the glass, removing the peel and ice. Let the foam settle, then add the small orange curl.
