“When I am in trouble, eating is the only thing that consoles me.”
Ingredients
30 ml Sammy The Jetsetter
60 ml freshly squeezed orange juice
10 ml quarter-strength agave preparation (see preparation)
Glassware: 300 ml fluted highball
Ice: Solid cubes to fill the glass
Garnish: 1 small fresh orange wedge
Method
Preparation
Quarter-strength agave preparation: stir 10 ml Sammy agave, undiluted as supplied, with 30 ml water until uniform. Measure 10 ml of this preparation, not neat agave, into the drink. Refrigerate and use the same day. Squeeze and fine-strain the orange juice immediately before aerating.
Make the cocktail
1. Blend the orange juice alone for 8 seconds to introduce a light foam.
2. Stir The Jetsetter and the quarter-strength agave preparation together in a chilled highball, then fill with solid ice.
3. Pour the aerated juice over the ice and use one gentle lift of a spoon to marry the layers without losing the foam. Add the orange wedge.
