Preparation

Aquafaba is the strained liquid from a can of chickpeas; choose unsalted. Orange blossom water must be culinary and alcohol-free, not an extract or perfume. Orange blossom working dilution: combine 10 ml orange blossom water with three 60 ml measures of chilled water and a further 10 ml water. Stir thoroughly. Measure only 10 ml of this working dilution into the drink, never neat orange blossom water at the serving measure. Contains dairy; chickpea sensitivity is also possible. Make fresh for the session, refrigerate promptly and keep chilled until use.

Make the cocktail

1. Chill a Collins glass. Add all measured ingredients except soda to a shaker, using the orange blossom working dilution, not neat blossom water.

2. Shake without ice for 20 seconds, then add solid ice and shake for 15 seconds more; the working dilution already contributes water.

3. Fine-strain into the glass, wait 20 seconds, then pour the measured soda slowly down the side. Stop to let the foam settle if it approaches the rim. Finish with orange zest.
