Preparation

White grape-tea base: steep 1 g white tea in 60 ml water plus 30 ml water at 85 C for 3 minutes; strain and measure 60 ml infusion. Combine this with 30 ml unsweetened white grape juice and 10 ml fresh lemon juice, then chill. This replaces white vermouth; do not add wine. Mild orange-peel infusion: steep 2 g freshly cut orange zest, with no white pith, in two 60 ml measures of water at 90 C for 10 minutes, covered. Strain and cool; measure 10 ml for the drink. Do not top up. This is a mild, unsweetened citrus preparation, not concentrated bitters, extract or orange liqueur. Make fresh for the session, refrigerate promptly and keep chilled until use.

Make the cocktail

1. Chill the coupe. Put all measured ingredients in a shaker and shake without ice for 12 seconds.

2. Add solid ice and shake again for 8 seconds. Fine-strain into the empty chilled coupe.

3. Allow the foam to settle for 15 seconds, then rest a fine orange twist across its edge.
