Preparation

White tea: steep 1.5 g plain white tea in 60 ml water plus 15 ml water at approximately 80°C for 3 minutes. Strain and cool; measure only the specified serving amount from the strained tea. Refrigerate and use the same day. Half-strength agave preparation: stir 30 ml Sammy agave, undiluted as supplied, with 30 ml water until uniform. Measure 10 ml of this preparation, not neat agave, into the drink. Refrigerate and use the same day. Open the soda just before serving.

Make the cocktail

1. Chill the flute and all the ingredients. Shake Raconteur, lemon, the half-strength agave preparation, grape juice and tea with cubed ice for 8 seconds.

2. Double-strain into the flute, leaving room for the soda.

3. Add the 30 ml soda slowly down the inside of the glass. Lift gently once with a spoon, then add the lemon ribbon. Never shake the soda.
