Preparation

Spiced lime infusion: cover 8 g thinly sliced fresh ginger, 3 whole cloves, 1 g cinnamon stick and 3 g fresh lime zest with two 60 ml measures of just-boiled water. Steep 10 minutes, strain, cool and chill before measuring; no unmeasured water top-up. It supplies falernum and bitters aromatics without adding a liqueur or alcohol-based bitters. Make fresh for the session, refrigerate promptly and keep chilled until use.

Make the cocktail

1. Pour all liquids into a chilled slim Collins glass and stir to disperse the agave.

2. Half-fill with crushed ice. Rotate a bar spoon briskly between your palms for 8 seconds to chill and combine.

3. Fill to the rim with fresh crushed ice. Add the orange half-wheel and mint sprig, then serve immediately.
